Eggy Muffins with Fresh Tomato Salsa


Not all of the recipes I put up here will be healthy but as it's January (just) I thought I would share my favourite, quick and incredibly healthy bite with you. 

Perfect after a workout for a protein boost or simply for a brunch at the weekend. The singing salsa cuts through the richness of the eggs perfectly and you can make it in under 5 minutes.

To keep your eggs low fat use a ceramic pan - there's no need for any oil or butter. It works with fried eggs too.

Healthy Nutty Spelt Pancakes


Show me someone who doesn't enjoy something of a treat for breakfast at the weekend. Well, Spelt (yes i know give it a chance) pancakes hit the spot without leaving a dent on the new years resolution which is of course "be more healthy".


These tasty morsels are nutritional, nutty in flavour, filling without being heavy on your tummy and absolutely delish topped off with a dollop of 100% natural yoghurt and some Bonne Maman cherry compote. The dusting of powdered sugar adds just enough sweetness but with literally zero calories.
